Spice Powders




Rasam Powder:
 


Ingredients:

  • kandipappu(yellow lentils) -2tbspns
  • Dhaniyalu(coriander seeds)-1tbspn
  • jeera(Cumin )-1tbspn
  • miriyalu(pepper corns)-1/2 tbspn
  • Red dry chillies-3
Procedure:

Grind all the spices coarsely and store it in a air -tight container.

Senagala Podi(Roasted gram Powder) :
 

Ingredients:
  • Senagalu (Roasted gram) :1 cup
  • Salt : as per taste
  • Dry coconut powder : 1/2 cup
  • Red chillies : 3-4
  • Garlic pods: 4  
Procedure:

Grind all the ingrediants to a fine powder and store it in a air tight container.

Karivepaku Podi (Curry leaves powder):

Ingredients:
  • Curry leaves: 2 cups
  • Senaga pappu(chana dal) : 4tbspn
  • Minapappu(Urad dal) : 2 tbspn
  • Cumin seeds : 1 tbspn
  • Coriander seeds : 1 1/2 tbspn
  • Dried chillies : 6-7
  • Tamarind : small lemon sized
  • Oil : 1 1/2 tbspn
  • Salt : as per taste
Procedure:
  1. Heat 1tbspn oil in a pan , add chana dal,urad dal fry till the color slightly changed and keep it aside.
  2. Now in the same pan, fry cumin seeds,corriander seeds,red chillies for 2 mins and keep aside,
  3. Now add 1/2 tbspn oil,fry curry leaves and keep aside.
  4. Now let them cool to normal temparature,grind all the spices one by one.
  5. Add tamarind, grind it again,keep it aside.
  6. Grind curry leaves and lastly mix it with the spices powder.
  7. This nice aromatic powder can be served with hot rice,topping for dosa and idli.
Pulusu Podi :

Ingredients:
  • Oil : 1/2 tblspn
  • Dry red chillies : 3-4
  • Chana dal : 1 tblspn
  • Urad dal : 1 tblspn
  • Dhania(coriander seeds) : 1/4 tblspn
  • Roasted gram : 3 tblspn
Procedure :
  1. Heat oil in a pan , add red chillies , chana dal ,urad dal , dhaniya  and roasted gram.
  2. Fry till the color changed to light golden brown.
  3. Cool it and grind to a fine powder.
  4. Store it in a air-tight container and it will be fresh for one month.
