Coriander Rice






Ingredients:

  • Coriander Leaves : 1 big bunch
  • Boiled rice : 2 cups
  • Green chillies : 3(can reduce according to your spice)
  • Ginger : 2 small pieces
  • Salt : as per taste
  • Cashews : 6(split and cut into small pieces)
  • Oil : 2 spoons
  • Ghee :  1spoon
  • Cumin seeds 1 spoon
  • Asefotida : a pinch
  • Roasted gram : 1/4 cup
  • Shredded dry coconut : 1/4 cup
Procedure:
  1. Grind corriander leaves, chilles and ginger together adding few drops of water. Put it aside.
  2. Grind roasted gram, dried coconut and keep it aside.
  3. Heat oil  and ghee in a pan,add cumin seeds . Let them splitter. Now add asefotida and splitted cashews.
  4. Let them fry till cahews turn to golden brown color.
  5. Now add the coriander paste to it.Add salt and let it fry throughly till the raw smell goes.
  6. Now add boiled rice and grinded powder to it and  mix well.
  7. Garnish with coriander leaves and serve hot.
