Spinach has a high nutritional value and is extremely rich in antioxidants especially when fresh , steamed or quickly boiled . It is the one green leafy vegetable, that appears most in my kitchen . I cook atleast once in a week. Regular dishes that I prepare are Palak dal , palak panner..This time i tried making rice with it.. adding few soya granules , with a touch up of some spices and sauted with palak paste..

Ingredients:
- Spinach paste : 1cup (boil spinach leaves and make a paste)
- Rice : 1 1/2 cups (cooked)
- Soya granules : 1/2 cup
- Green chillies : 2-3
- Onions : 1
- Ginger : 1" piece (chopped)
- Cumin :1 tspn
- Salt : as per taste
- Ajwain (vaamu) : 1/4 tspn (make a coarse powder)
- Oil : 2 tblspn
- Lemon juice : 1 tblspn
- Heat oil in a pan , add cumin seeds , fry for few secs . Add chopped ginger , split green chillies , chopped onions and fry till they become tender.
- Add spinach paste and keep stiring once in a while till it becomes little thick.
- Add salt and soya granules and mix well. Let it cook for 3-4 mins.
- Add cooked rice , sprinkle ajwain powder and mix well.
- Turn off the stove and add lemon juice . Mix well and serve hot with raita..:)
